Recipe for Virgin Mint Julep from Telestial Kitchen

Virgin Mint Julep

4-5 mint sprigs
1 1/2 cups sugar
2 cups cold water
3/4 cup lemon juice
1/4 cup pineapple juice
1 1/2 qt ginger ale
Thinly-sliced lemon slices (for garnish)

Rinse the mint and discard the stems. Place sugar, water lemon juice, pineapple juice in a medium-sized bowl, mix, and stir in the mint leaves. Allow to stand for 30 minutes.

Fill a large pitcher with ice cubes. Strain the liquid over the ice. Add the ginger ale and lemon slices and serve.

Original Recipe Yield 4 gallons
 

Ingredients

  • 6 cups white sugar
  • 3 1/3 gallons cold water
  • 1 (2 ounce) bottle root beer extract
  • 4 pounds dry ice

Directions

  1. In a large cooler, mix together the sugar and water, stirring to dissolve sugar completely. Stir in the root beer extract. Carefully place the dry ice into the cooler, and cover loosely with the lid. Do not secure the lid, as pressure may build up.
  2. Let the mixture brew for about an hour before serving. Leftover root beer can be stored in recycled 2 liter pop bottles or for pretty.. glass bottles with stoppers.
