Pretty in Pink Wedding: The Cake...

There are so many pretty pink wedding cakes it's hard to choose from all of them. I love this little DIY coconut cake found on OneStylishBride.com .. Did you know that in the south they have this marvelous frozen coconut you can use to make these cakes. It's not all dried up like the kind we have here in the west that comes in bags. My grandmother is famous for her coconut cake, but it has never been as good as when she lived in Charlotte. She is a food snob though... because I can tell you from eating many a bite that grandma's cake is still the BEST...

Recipe: Grandma's Coconut Cake

One box white cake mix

One large carton of sour cream

One nine ounce carton of frozen whipped topping

Two packages of coconut

One cup of sugar

Directions: Mix cake according to package directions. Bake in two nine inch rounds. Cool. Slice each round in two so that you'll have 4 layers. Mix coconut, sour cream & sugar. Spread between the layers. Use the other half of whipping cream to frost top and sides of cake. Garnish with coconut. Refrigerate for several hours.
